Papa’s Broccoli & Chedda’ Pasta

Finding those veggies that our kids will eat is OFTEN a struggle bus. I have found that when we have landed on a veggie or fruit that they love, I keep it consistent but introducing it differently over time.

This pasta is WHERE IT IS AT y’all!

First, Grab your ingredients:

  • 2 heads of fresh broccoli
  • 1 onion
  • 1 package of Rouses fusilli pasta
  • 2 lbs of Rouses chicken breast

NOW!

Boil your chicken breasts until at least 160 degrees

Cut up your broccoli heads into small pieces. The smaller the better chance it will fit into your kiddo’s mouth.

After broccoli is chopped, sauté until softened. I find they like it steamed and softer a bit rather than that crunch.

Next.
Cut up your onion and sauté until lightly brown and then purée amd sit aside.

Second for the roux:

  • 2 cups of cheddar cheese
  • 1 tablespoon of flour
  • 1 tablespoon of butter

When chicken is cooked completely, take out of water and sit aside to cool.

*USE CHICKEN WATER TO BOIL FUSILLI*

Make a roux using some of the boiling water.
Then. adding the cheddar cheese.

Fold the cheddar into the roux until a beautifully, plastic like cheese transforms in front of your face! This process is SO much easier and cheaper than having that other product we will remain nameless 😂

After pasta is complete, drain and add all ingredients to pot.
Incorporate all ingredients and add about half cup of milk to help loosen and bind everything together.

Season with:

  • At least a half teaspoon of salt.
    10-15 cranks of pepper.

Do not under season!

After chicken is cooled, chop into small pieces to ensure an easy consumption.

Then incorporate all together and Enjoy!

Take your time and enjoy yourself. Listen to some Wynton Marsalis and cut the broccoli friends.
